Grapes from beautiful 35-year-old Grenache vines in the Adelaide Hills. These are the oldest Grenache vines in the Adelaide Hills, and they perform perfectly in our Rose.
To the Grenache we add about 20 % Pinot Gris grapes from the same vineyard to add a lusciousness to the mid palate of the wine.
With a mentor vigneron from Provence to assist, we tried to capture the essence of the Provencal style using all the secrets. Cold harvest, cold stabilisation before ferment which is a French term for using juice lees to add power and texture and then a cooler ferment.
Texture and a tension between phenolics and acidity which for me characterises the style and the wine I wanted to make.
